Operation: WEDDING

My macaron making is about to come back full force. When a bride says "I've heard you make MACARONS! Will you make them for my wedding?" any sane baker would laugh. I excitedly jumped for joy and said "YES!" Then about an hour later, I thought "what in God's green earth have you done?" Oh well.

Macarons for weddings are starting to be more popular, and for good reason. You can have a variety of colors and flavors that fit your color scheme while being wonderfully adventurous. 3-4 color and flavor combinations all spread on a table? Yes, please. But what flavors to pick??

1) The Staple. You need a simple, clean flavor that will appeal to anyone. It also adds some lightness to the spread. Vanilla Bean or Almond are my suggestions.

2) The Easy One: Next, an easy flavor with a bit more depth. Chocolate Cherry. Strawberry. Raspberry Lemon. Things that pickier eaters will still probably enjoy.

3) The Step Up: Now it's time to get creative. S'mores? Sure. Neapolitan? Why not! Chocolate chip cookie dough? UM YES.

4) The Michelin Star: this is for the foodies. Ispahan macarons with rose, raspberry, and lychee? YES. Lavender blueberry lemon? Get in my mouth. Hibiscus lime green tea? I AM DYING.

Now, if it were me, I'd probably have six flavors, because I really, really love macarons. Like, a ton.

What's also fun about these gems is playing with color. So many of these have vibrant colors just from the ingredients. Jewel toned wedding? Jewel toned macarons are a must, in my opinion. Winter wedding? Hello, lots of pale yummy macarons! Hogwarts wedding? Different flavors and colors for each house is a totally valid option.
